Homemade Chicken Crispers

My kids love chicken crispers and here is my home made version. Of course these are not deep fried so they are a healthier version. Here are our homemade chicken crispers.

First take some chicken breasts and slice them into strips,. I then wisk up some eggs and fix a bowl of the flour mixture. I use roughly two cups of flour and two cups of Panko bread crumbs but we are a large family. This is for 3 lbs. of chicken. Add some season salt and pepper. Stir. The key to getting a good thick coat of the breading is to double dip it. First take the wedges of chicken and coat with egg, dredge in flour and then repeat. Back in the egg and then flour mixture again.

I like to oven fry on a cookie sheet with canola oil and a few dabs of butter. I just crowd them on there but don't layer them. Into the oven at 375 degrees for about 30 mins.  turning once half way through. Bake until crispy and done. My oven is old so your time might vary.

Served up with some home made ranch dressing and yum!

  2. Looks yummy. My husband makes chicken a similar way, but he doesn't use eggs. I'll suggest it to him. It looks like it makes it extra crispy.
