Where There's a Grill, There's a Way

I hate to turn on my oven in the summer and I try to use my cook top sparingly. We grill several times a week and I wanted to use up some green beans I had bought and a zucchini from the garden. I thought why not, I grill other veggies.

Just made a foil packet by placing two long pieces of foil to make a T. Then I take whatever veggies, toss in some fresh chives, salt and pepper and coat with a little olive oil. Fold up the foil packet and put on the grill with your meat.



The veggies steam wonderfully in their packet and the house stays cooler. Just open and serve.

I cut the zucchini in half the long way, oil them up with olive oil and place right on the grill, away from direct flame. I love 'em that way!

Yum! We grill a lot in the summer time also. We love grilled zucchini and yellow squash together. I usually throw in a chopped up onion, some Mrs Dash, salt, pepper, and a whole lot of butter. Love it!

Grilled veggies are the best...I can taste them now1 Don't you just love being able to cook in foil and throw it away....

Yum! It is worth it...anything to keep the house cooler. Trip likes to grill zucchini and corn (not together....) :D

I have never tried green beans and zucchini, but yours looks yummeh for the tummeh!

Yummy! I have not done greenbeans, but I've done everything else. My fav is the little red new potatoes, with vadialia onions, with olive oil and kosher salt and pepper, and cabbage! It is AWESOME on the grill! I would have never thought about doing the GB's on the grill, but will now have to try! Thanks!

We grill veggies a lot too. I like to lay zucchini right onto the grill. Slice lengthwise, and brush with olive oil, salt and pepper, and lay flesh side down on grill. SO yummy! We do the foil packets a lot too. Nice to not have to turn on the oven in the summer!!! Loved your big bowl of maters too! I picked a bunch yesterday and made bacon, lettuce and tomato sandwiches for dinner. The lettuce was also from my garden!
