Chicken Broccoli Casserole

Chicken broccoli casserole.

Forced to find a recipe to use up six pounds of chicken I had cooked up in the crockpot, I found a yummy basic freezable meal that the family loved. I like to double cook so I can cook once and eat twice.  The recipe is from food.com. You can go there to look at it. It was easy to make and you could vary it to your tastes or what you have on hand. I served it over steamed rice.
At .99 a pound these breasts on the bone cost me about $6 for 6 lbs. I just put them in the crockpot with season salt and lemon pepper with about and inch of water and let them cook for about four hours on high.


Layered and ready to go in the oven with one to freeze for later.

  1. Looks yummy! I have a really good chicken broccoli and rice casserole recipe, it has curry in it...not sure if you like curry, but it is a tasty dish! I love decorating for Valentines day, can't wait to see your decor :)

  2. I have a dear friend who makes this recipe often when all her six grown children and spouses come home. She makes two for them. I made two meat loaves yesterday. One for the weekend and one for later. I have not made that in about a year and it was good, no recipe of course just threw it together like my mama would have done.

  8. Busy, busy, busy! Yum...Years ago, when the kids were still at home, I used to make a chicken broccoli casserole that had the rice included. It makes for a delicious, hearty and economical meal to feed a good-sized family. I haven't made it in ages but I need one that feeds a family of two instead!
