Garden Strata

I made us a simple supper strata for dinner the other night. I used up some mushrooms in the fridge and zucchini from the yard.

Garden Strata
Line the bottom of a quiche pan with thinly sliced potatoes. First butter or grease the pain though. I then layer with thinly sliced veggies I have. I used zucchini from my garden, chives and fresh parsley along with sliced mushrooms. I then whipped up five eggs with a little heavy cream I had leftover. Seasoned with salt and pepper. Before pouring on the egg mix, I sprinkled some grated Parmesan cheese. Cover with the egg and baked about 30 minutes at 375 degrees until a knife inserted came out clean.

Can you tell I think that sounds absolutely delicious??? We're expected a bit cooler weather here for the weekend and this sounds like a perfect dish to make!

Yummy! I like to do quiche using a potato crust instead of pastry sometimes too.
Isn't it great using the garden's bounty!!

Looks yummy Elaine. I made brown rice with dried shitake mushrooms the other day and they smelled awful when cooking but in the end tasted just fine.

I think this will need to be our supper tonight -- I've got potatoes and yellow squash from the CSA (a LOT of yellow squash) and a lot of fresh laid eggs and I think I'll use some breakfast sausage in it. Thanks for sharing -- right when I needed an idea for dinner and for all this yellow squash.

To answer you questions...
we use our dehydrated fruits and veggies as a snack, and to cook with.
Also.. that dehydrater makes delicious turkey jerky :)
