We have been making lots of salads this summer and this went perfect with the barbecued teriyaki chicken we had the other night. A little something different.
Oriental Pasta Salad
Take any noodles you would like but I used bow tie and boil as usual. Now this is for a large bowl as we are a large family so make adjustments.
Add generous amounts of chopped celery, bell pepper, water chestnuts (one can), cilantro, green onions and some chopped cashews. Sesame seeds would be good but I did not have any.
For dressing I used almost a half cup of canola oil and 1/4 cup of rice wine vinegar. Add to that teaspoon of sugar and salt and pepper to taste. Mix well and toss with salad. Refrigerate for a few hours.
You had me at pasta but CC my Asia lovin' kiddo will love this.
