Use leftover bread in a yummy sausage and egg baked breakfast.
So simple. Take one chub of breakfast sausage browned, about half a loaf of white bread that got smashed beyond sandwich use in the freezer, tear up the bread, mix with the sausage in a buttered 13x9 pan and cover with 4 eggs whisked with some milk, salt and pepper. Bake at 400 for about 25 minutes or until the bread is crispy on top. Wha-la!
Do you love pickled eggs like we do? They are a favorite around here. All jars void of pickles but left with juice are always saved for pickled eggs and splashes of the juice are wonderful in potato salad and macaroni salad. Gives you flavor, moistness but not as much fat as if you used all mayo or sour cream.Thank you Rocky and Flower Muffin for a summer and fall of fresh eggs and wonderful egg dishes.. I had to buy my first eggs yesterday as the girls are not laying everyday like before. They are taking a seasonal rest and give me less eggs now.
I love this chicken. This is Rocky and she is so smart and isn't she just the most beautiful girl?

ReplyDeleteThat dish sounds absolutely delightful. I must try this. Your rocky is so beautiful. We have five Plymouth Barred Rocks and one Rhode Island Red. Ours have slowed down producing eggs too. But, that's o.k. ~ the girls do need a rest.

ReplyDeleteRocky is beautiful! I always use dill pickles and some of the juice in my potato salad. Never knew you could save it to pickle eggs. How long do you have to leave them in there? Have a great weekend. Tammy

I make a dish similar to this. But I use hash browns. I will have to try it with bread next time. It sounds real good. Great picture of Rocky.

Love it that your chickens are still making you happy and still giving you eggs. Ours are too.
Though one of the older girls that I got at first is molting. I didn't think they did that this time of year.
But they are still wonderful creatures and earn their keep!

I have never had a pickled egg. Are they hard boiled and then just put in pickle juice without their shells? Rocky is really pretty!

I found some spicy ones at Smart n Final but can't seem to find the regular kind. How long does it take for the pickle juice to work? I'm a wee bit impatient:) Wonderful blog, as always!
