How To Roast Beets In The Crock Pot

You can roast beets perfectly in the crock pot. Are you blessed with a harvest of beets but are looking for a way to cook them that does not heat up the kitchen? The slow cooker is a great way to cook beets without heating up the kitchen.

After I harvest the beets, saving the greens of course to eat that night, scrub them and trim them leaving about and inch or so of stem and of the root. This will prevent the beets from bleeding while cooking. Simply place them in the crock pot and drizzle with olive oil. I did not season mine but you could add some herbs or salt and pepper. Cook on high for a couple of hours switching to low for another 2-3 hours. My crock pot is small and does not cook fast so mine took about five hours. The beets were roasted to perfection.

  1. My Grandma grew beets and my Mom and loved to eat them and cook them. I never developed the taste for beets, rhubarb and the such. I know it's good for you, but. . . .

  4. I'm glad you posting this. I had no idea what to do with my beets! I did cook two in the oven, and added them to a quiche the other night. Yum!!!

  5. I LOVE my crockpot too! I think our Texas summers are as hot as yours in CA, and our oven heats our tiny kitchen up a lot. Didn't ever think about roasting veggies in the crockpot though, what a great idea.

  7. I use my crockpot all the time and never thought about using it for beets!
    P.S. I think you said "microwave" when you meant "crockpot!" - those would be some well cooked beets!!
