Red Quinoa And Edamame Salad Recipe

We love QUINOA and this red quinoa and edamame salad recipe is a good one. Simple veg salad recipes make serving healthy meals so much easier.
I try to make a quinoa recipe at least once every two weeks. It is perfect for lunches and so good for you two. Our latest favorite is red quinoa and edamame salad.

Red Quinoa and Edamame Salad

Ingredients
  • I cup red quinoa
  • 1 cup shelled frozen edamame
  • 3/4 cup crumbled feta cheese
  • 1 cup chopped cilantro
  • 1/4 cup diced roasted red peppers
  • lemon juice
  • olive oil
  • salt and pepper
Cooking Directions
  1. Cook the quinoa to package directions. In place of water use chicken broth or drop a bullion cube in the water. Gives quinoa a good flavor. When it is done let it cool down a bit. Add all the rest of the ingredients and toss. Taste and add more lemon juice if you would like to. Refrigerate for at least a few hours but this keeps well for days.

  1. I am going to have to try making a salad with quinoa. I have eaten them and enjoyed them.

  2. Yum! I love quinoa, too. So good for you and lots of protein. The only reason I don't make it often is because you're supposed to rinse it beforehand and even with a fine mesh strainer, a lot of those little grains fall through the strainer and get stuck in the mesh. I've tried lining the strainer with paper towels and then a lot of the quinoa gets stuck to the towels! If you have any "tricks of the trade", let me know.
