Onto March and closer to spring and thinking of fresher ingredients for Menu Plan Sunday - March Dinner Ideas. Our garden is coming to life and greens and lettuce are ready for picking. Can't wait for the first batch of beets.
Sunday: Take out Chinese to celebrate March birthdays
Monday: Roast Chicken, crispy oven sweet potatoes, greens from the garden
Tuesday: Easy enchilada pie(using leftover chicken from night before), Spanish rice, crock pot pinto beans (recipe coming soon) I can't believe I have never shared this economical but tasty way to cook pinto beans. So easy too.
Wednesday: Dinner with in-laws
Thursday: Crock pot poached salmon (another recipe to share), cilantro lime rice, dinner salad. The cilantro and lettuce will be from the garden.
Friday: I get off easy this week cause of birthday fun and my friends are meeting me for dinner. Family is on their own.
Saturday: BBQ pork shoulder, rolls, cabbage salad and Mom's best potato salad (this meal did not get made last time we had it on the plan so making it happen this weekend. Really looking forward to pulled pork sandwiches.
This will also be my freezer cooking for the week because there will be leftover shredded pork I will freeze for busy nights.

I just roasted a chicken for dinner tonight. Maybe I should try that enchilada pie for tomorrow or the next day! Sounds good.
