Make Ahead Freezer Breakfast Burritos

I have been asked to share the way I make my make ahead breakfast burritos. 
They are perfect for busy mornings, a quick hot meal or late night snack.

Here is how I make mine: You'll need...
A dozen medium sized flour tortillas. Warm them a bit when you start rolling so they are pliable
Cook up one package of  your favorite breakfast meat or do like I do, cook some ground turkey and season with lots of sage, salt and pepper
Grate two cups of cheese you like. I use cheddar
Dice up one can of potatoes or about two cups of cooked potatoes you may have left over
Whisk up 7-8 eggs
Salsa

After cooking the meat, add the eggs and potatoes and season as you like. When cooled down and the tortillas are warmed and flexible, start an assembly line. I place about four squares of plastic wrap down at a time or even better have one of my kids come in an tear and set down some plastic wrap as I assemble the make ahead freezer breakfast burritos. 
Fill burritos and wrap with both ends tucked and then roll up in the wrap and a hint: wrap them on the diagonal on the plastic wrap. Then store together in the freezer in a large ziploc bag. When ready to eat, unwrap and heat in the microwave about a minute. Microwaves vary so test one for the perfect time of cooking. These provide a an easy healthy hot breakfast for everyone to grab and take with them.

  3. I do this frequently too. But I don't freeze them, because a dozen will go in a few days here with my big crowd!
