Hawaiian Fried Rice

We love fried rice in this house. Often I will use leftover pork roast for pork fried rice but recently I tried to shake it up a bit and create something a little different. Now this is a funny recipe with no exact measurements but add as you like per your taste.

Hawaiian Fried Rice
Take leftover steamed rice or rice you make early in the day. Fried rice is best if you use cold white rice. Refrigerate the rice before you make this dish.

Ingredients:
Cold white rice
shrimp
pineapple chunks
unsalted cashews
green onions
finely chopped carrots (or bell peppers would be nice)
soy sauce
stir fry sauce
red pepper flakes

Take a large non stick pan or saute pan and add a little oil and get the pan hot. I always saute the carrots a little first to soften. Add the rice and some soy sauce to taste. Get good and hot and add all the other ingredients and let cook on high heat turning only occasionally. If you want a lot of shrimp add loads like we did or just a taste of red pepper flakes. I just use up what I have and throw in amounts to taste. Fried rice is a great dish that can be changed in so many ways.
We served with some grilled teriyaki chicken.

I always make too much rice so the rest goes in a stir fry. This looks simple and yummy! ~ Maureen

Sounds and looks Yummie...all except for the shrimp.
I'm not a shrimp gal.
But ham would be good I bet... I love pineapple and ham.
So I'm still saving the recipe.

When I make rice, I always double the amount just so I can make fried rice. One of our favorites.
Enjoy.
blessings to you.

Hi Elaine! Thanks for coming by my blog, and for the sweet comment.

Ok, this is right up my alley. I am not a shrimp lover, but I would definitely love this with pork or chicken. Pineapple and cashews are 2 of my favorites. Yum.

Thanks for another yummy recipe Elaine! Must make it! Your hens are growing and so sweet. Love the coop you are making. I had 3 chicks. 1 Barred Rock & 2 New Hampshire Reds. At about 4 months, one of the reds tall was growing long and had a funny noise each day! Yes a rooster and now lives on a farm in Vista! It does happen!

Happy Easter to you and yours,
Hugs,
Maryjane
