Our Favorite Dinner Salad

Almost every night of the week, we have a fresh green salad on our table. My hubby loves salad and sometimes I think it is the only fresh produce he finally eats in a day as his apple in his lunch seems to keep coming back every day. So if he loves salad, this wife is going to give him one.


Our favorite salad is made of fresh spinach, tomatoes, mushrooms, cucumbers and feta cheese sprinkles.
Other items we love to toss in are sliced hard boiled egg and greek olives. Did you know spinach is easier to digest than lettuce and more nutrient rich. So next time try spinach. Even my youngest will eat this salad but gives me all of her mushrooms. Here is the recipe for my easy vinaigrette dressing.

I didn't know spinach was easier to digest than lettuce. My favourite way to have spinach is sauteed in a bit of oil, salt and pepper. Love it and it's so easy to grow! ~ Maureen

I use spinach a lot instead of lettuce especially the baby organic. If I use lettuce it is usually the dark leafed varieties. Iceberg does nothing for me and for years I thought I didn't like salad but it was the way they fixed them and the ingredients. I love yours! I agree too about the homemade dressing and it's so easy. I always love what you make because it's what I love too! LOL!

I didn't know about the spinach easier to digest...I knew it was high nutrients and vitamin A and C

I always use spinach as the base for my salad. I read somewhere a long time ago that it was on the top 10 (I think it was) foods that are good for us - all the dark-colored foods like spinach and blueberries and...dark chocolate!! ♥♥

Looks delicious! We eat a lot of salads too and always make our own vinaigrette. It's always a little different. Lately, I've been mixing two vinegars - balsamic and red wine together with the olive oil and it is so good. I also soak garlic cloves in it until it is ready to serve. I love just that hint of garlic. Mmmmm, lunch time here. Good reminder on the spinach!

I enjoy salads in the summer--the easier and quicker, the better. I'll have to pass on the cukes, though. They don't like me.
