Homemade Meatballs

This is an easy recipe for homemade meatballs. These are great subs or spaghetti and meatballs are a great make ahead freezer meal.

My youngest loves for me to make homemade meatballs.  She tells me they are the best. Though she probably has only ever ate mine. Anyway, I have two Italian sisters-in-law so I better make good meatballs right?

A person told me a long time ago the secret to good meatballs is parmesan cheese. You have to add a generous amount and it makes for tasty moist meatballs. Here is my recipe for the best homemade meatballs.

For one batch of meatballs I use the 20oz. package of ground turkey. Double or triple like I do and freeze some.

Homemade Meatballs
16oz - 20oz Ground turkey, beef or whatever you prefer
1 egg
1/2 c. - 1 c. bread crumbs
1/2 c. parmesan cheese
1 tsp. Italian seasoning
salt and pepper to taste
(Finely minced onion and garlic) optional. I do not eat either of these so our meatballs are made without but add if you like. Acid reflux diet over here.

Mix well. I use my hands. Form into small meatballs and either pan fry in some olive oil or cook on a cookie sheet in the oven until browned at 350. Don't overcook. I then place them in the pan of sauce to finish cooking while the sauce is simmering.

I make mine exactly the same way except I also add a splash of milk. I got that tip from a friend of mine who owns an Italian restaurant. Now I want a meatball sandwich. :-)

I made these tonight and they are tasty! I used Panko breadcrumbs (all I had on hand), added minced garlic, and browned them in EVOO on stove top. The Parmesan stuck in places, making for very yummy, crispy tidbits! Thanks for sharing.

Steve does all the cooking and he does it all from scratch, but he rarely plans. Sometimes at 4 p.m. I'll ask him what he's planning for dinner and he still hasn't decided. That's why he relies on his soups. He always makes enough that we get 3-4 meals per batch.

He's thinking of making a roast tonight and that sounds pretty good since it is supposed to rain later!
