Summer Eats

I love the lighter fare of summer. It is hot and you just don't want as heavy a meal and that for us means salads. I love salad and can eat if everyday. We have a crunchy salad most nights of the week along with our dinner.
A summer fave is a big chef's salad.
Into this one I threw ham, eggs, turkey bacon, olives, tomatoes and cheese.

Another of my favorite summer lunches is a cheddar and tomato sandwich. On a good slice of whole wheat bread spread with butter and topped with salt and pepper. Hubby and I have this on the weekends whenever we have fresh tomatoes to use up.

  7. I do believe this is what will be for dinner tonight - Thanks.

    Last night we had an Asian Salad from McDonald's. Here's the scoop: it you get grilled chicken 270 calories, with crispy chicken 420 calories! {I made the wrong choice - woops}

    Yours looks better!

  10. It all looks good! Here in Oklahoma, it's been sizzling hot for so long it's pitiful. I just don't even want to COOK anything. This cool food looks good! I really enjoy salads. I'll have to remember that tomato-cheese sandwich, that sounds good, too. :)

  12. Boy, that salad looks soooo good! I had a tomato, mozzarella, and pesto salad while on vacation and I can't wait to make it at home. We are just getting cherry tomatoes, but soon we will have those big, yummy ones.

    PRAISE FOR RED

    What is there about the color red
    That makes me want to stand on my head,
    And give a loud shout or two of praise
    For crimson tints that brighten my days?
