Best Homemade Pancake Mix Recipe

I wanted to share the best homemade pancake mix recipe I have found. Over the years I tested many a scratch pancake mix recipe but this is by far the best. And don't forget the secret to the fluffiest pancakes ever.

This recipe is a perfect homemade pancake mix to store. Just mix together and store your dry ingredients and add the wet when you are ready to make a batch of pancakes. I keep a copy of the recipe taped inside my kitchen cabinet so we always know what wet ingredients to add. You can easily halve this recipe for 2-3 people.
Prep time: 15 minutes
Ingredients
  • 2 cups flour
  • 1/2 cup sugar
  • 1 teaspoon salt
  • 1 1/2 tablespoon baking powder
  • 1 egg lightly beaten
  • 2 cups milk
  • 2 tablespoons melted butter
  • 2 teaspoons vanilla
Cooking Directions
  1. Combine all dry ingredients in a large bowl. In medium bowl combine wet ingredients and add to dry. Stir mix until just blended. Leaving some lumps is fine and helps make a fluffier pancake.

If you find you are out eggs and still want scratch pancakes you can use these egg substitutes.

Homemade pancakes are the best! Growing up mom always made them from the box. I ate them but wasn't to happy about them. When I got married, I decided that I would make most everything from scratch. Pancakes are always homemade here, and now I have started making real buttermilk pancakes...yum!!! TFS

I wish I could make these, however, my husband is currently on a low carb diet and although I don't have to loose any weight, I hate to eat carbs in front of him. However, next time he is out of town I am whipping up a batch of these pancakes and throwing in a handful of blueberries. Yum! Thanks for the recipe.

We are huge pancake lovers over here and this sounds delish. I use a similar recipe, without the vanilla, may have to try that!

WW pastry flour, spelt, etc. all works too for a healthier version...
