Chopped Greek Salad

This Chopped Greek Salad is a great low carb recipe.

A couple of weeks ago I decided I needed to get serious about eating better and shedding a few pounds after all the holidays. No more, "Oh there's a cookie, I think I will eat three." I have been doing well and getting out there and walking everyday. I literally feel lighter. Concentrating on eating lean proteins and lots of fruits and veggies. I have a carb addiction and I needed to break that.

Above is a salad I came up with and everyone in the house loved it so I thought I would share.

Chopped Greek Salad


Now, I didn't measure anything but just chopped up what I had so you can decide what and how much you want to add of the veggies.

Chopped Sugar Snap Peas
Chopped Bell Peppers
Chopped Zucchini
Chopped Cucumber
Chopped Green Olives
About a 1/4 cup or more if you like of Feta Cheese
A Drizzle of Olive Oil
Juice from one Lemon
salt and pepper

Toss and let sit for a few minutes and enjoy. I have ate it three times this week I enjoy it so much. I added diced chicken one day for a complete meal.

  1. First of all, your picture is so pretty and colorful. You have mad photography skillz. Salad looks delish. I've been trying to do better with my food choices also. Carb addict here. I haven't given up on them completely but I am eating a lot more fruits and veggies. Have a great weekend!
