My Favorite Breakfast


After I drop the last kid at school and I walk in the house, I am usually starving. My new favorite breakfast is  something I really look forward to. Many days I will treat myself to a little breakfast and a fresh cup of coffee.

I put a new cup in the Keurig, my new fave is Starbucks Pike Place Roast. Boy is it good. Add some creamer and splenda and turn the little frying pan on.


I love egg in a hole or egg in a basket. Not sure of the official name. Generously butter your hot pan and cut a whole in the center of your bread. Drop an egg right in the center. Often it is a fresh warm egg I just collected from one of the hens. Throw that extra piece of bread in there too to crisp up in the butter. Add a little salt and pepper. Flip after about a minute.


Cook another minute or two on the other side. I sit at the table often with the lap top and have a nice breakfast just for me and a few minutes of peace before I start my daily chores.

  2. Yum! I made this same breakfast a week or so ago and now you've reminded to make it again. :o)

    I'm not a coffee drinker (even though I LOVE the smell of coffee) so would add a cup of tea instead. Either way, it's a good way to start the day.

  4. Oh friend, I too love fresh coffee and that same egg dish; I call it Mystery Egg or Egyptian Egg, and don't know how it got these names. I like the yellow color of your coffee maker.

  11. I'm not a coffee drinker--too many English genes, I guess. Your yellow Keurig is really cute, though.

    I purchased a tiny skillet the other day to cook one egg. I love it! I love breakfast and can eat breakfast any time of the day.

  12. Egg in the hole, that's what we call it..I've seen named different things...they are good arn't they?
    especially with homemade bread...my youngest loves these too. With a good cuppa....to start your day....

  14. You will think me strange but you know what I love about that colorful scene most [beside the COLOR] is tht the Keurig does NOT LOOK MODERN..never have seen that model. SHARP!
    you are so smart to take that early break-it's FEEDING YOURSELF...in more ways than food-a time when you can catch our breath literally, time to reflect on life, family and the day's schedule ahead of you..I hope you have a little devotional material closeby-somethng to encourage and inspire too..:^)

  28. What a lovely way to start the day Elaine. We call that breakfast Toad in Hole or Egg Bread and it is a favourite here too.

    Like many others have said, I love the colours in your kitchen too, so bright and cheery!

    I start my morning with oatmeal (porridge) and orange juice, followed by a nice cup of tea...I'm not a coffee drinker, although I do have one from time to time :)

    Breakfast is my favorite meal of the day too. I love the egg and sandwich toast as well. But what I appreciate best in your breakfast is the fact that you generate your own eggs, fresh from your farm. Very fresh and healthy.
