Broccoli Egg Salad

This is such a lovely, healthy, easy salad with a few whole ingredients. Broccoli egg salad is a favorite in our house and is a entire one bowl meal full of protein and fiber.
Great for low carb lovers and a paleo salad idea.

Broccoli Egg Salad

Ingredients:


  • One head of broccoli
  • 4 Hard boiled eggs
  • Red wine vinegar
  • Olive oil
  • Italian seasoning
  • salt 
  • pepper

Rinse the head of broccoli and cut into equal sized florets. In a large sauce pan, bring some salted water to a boil. Have a large bowl of ice water ready too. Drop the broccoli in the water and cook, stirring a couple of times, only about a minute or two. To check for doneness I pierce one and you want your fork to go in but for it to still be pretty firm.

When broccoli is done, transfer to the ice water to cool it down and stop cooking. Remove to a strainer and let it drain well. Transfer to a bowl and drizzle generously with olive oil and the red wine vinegar, salt and pepper. Just use what you like amount wise and toss well.

Peel and slice in wedges, your hard boiled eggs, and scatter evenly over the top of the broccoli.
In a small bowl, whisk a little olive oil, red wine vinegar, Italian seasoning, salt and pepper. Drizzle around over the eggs. Cover and store in refrigerator to keep cool and serve. Enjoy!
