Simple Deviled Eggs


At one of our parties in May I decided to make deviled eggs to serve. Now, I serve them all the time in summer but usually I make them just for us. I have to say I was astounded at how popular they were. MEN especially just loved them and gobbled them down. Does no one make deviled eggs any longer? One of our friends couldn't leave them alone and commented how it had been years since he had them. Simple delicious American fare.

There are so many ways to make fancy deviled eggs but my family prefers this basic recipe.

I never measure so the amounts are a guess. Just keep tasting. Mmmm.

Simple Deviled Eggs
Hard boil and cool a dozen eggs. When cooled peel and carefelly halve them scooping the yolks into a bow. Mash all the yolks with a fork. Add about 2 generous tablespoons of mayo (maybe more) and a generous scoop of Dijon mustard. Mix until creamy and smooth. Taste to see if you are happy. Top each with a light sprinkle of paprika.

  3. In the South they are still made all the time. I do not enjoy peeling the eggs but will make them. You are right about them getting gobbled up rapidly. I like them with a ham.

  5. I'm in the south -- deviled egg country for sure! It's pretty standard fare at any potluck, reception, or gathering of any kind, as well as family dinners.

  7. I make them for every gathering, they are my hubbys favorite,,,,I make them like you but I add a little pickle relish..and sometimes if I have it, a little horseradish for a kick....yummm!!!

  8. We always have about 50 members of my husband's family get together for Thanksgiving and Christmas lunch. No matter how many members we ask to bring deviled eggs, we always run out! As many as there are, that many will be eaten! Like you, I make them frequently, and my son will eat them as fast as I make them. BTW, I made your tuna mac salad - my husband and I loved it, the kids wouldn't touch it. :( Maybe they would have had to grow up with it? DD now informs me that she simply doesn't like noodles - did you ever hear of anyone who didn't like noodles? :) Thanks for sharing your recipes! Mary

  12. Elaine, Deviled eggs at church suppers and picnics in the south are a must. We can never keep them on the buffet. Everyone loves them. Now, I may have to make one for my supper. Bonnie

  13. I made two dozen eggs for deviled eggs, that is 48 deviled eggs, since they are halved, for Easter. I set them out as we were getting all of the food ready to put on the buffet table. And do you know that every single one of them were gone BEFORE the last person made it through the food line!!! They were plucked off one by one, before the meal was even served! A big favorite here! I sometimes add a little bit of sweet pickle, and I use some salt and pepper to taste.

Ladies I am going to add a new point of view to this little discussion I make them pretty much the same as you but I do add a little salt, a little [coarse black pepper] *I never use Miracle whip only real mayo and FOR SPECIAL OCASSIONS I DO HALF MAYO AND HALF SOUR CREAM..never bring home leftovers but here's the REAL TWIST-Others love 'em & ~I DO NOT EAT THEM

  18. This is how Shelley likes hers. Very simple. I do, too, but Trip and Shanley like the fancy Mediterranean style eggs, so sometimes I split them into the two recipes!

  20. My grandd's favorite! I have to PROMISE to make them for every occasion (and NON occasion LOL!)
    Pretty much the same recipe as yours, but use plain mustard, onion salt, pepper and a pinch of sugar..YUM..and they disappear quickly don't they??
