Grilled Parmesan Zucchini

It's summer and zucchini is coming out of our ears right? We love to grill out zucchini and grilled parmesan zucchini is hubby's favorite.


I like to pick my zucchini when they are only 5-6 inches long, this keeps them tender, skin and all.
I just slice in half, length wise, then take the end of a spoon and scrape down the center and scoop out some of the seeds creating a boat. Sprinkle with salt and pepper and then fill your boat with herbs and parmesan cheese. Drizzle with olive oil and cook skin side down on barbecue 7-9 minutes closing the lid the last few minutes. Remove and enjoy your tender grilled parmesan zucchini.
