Gluten Free Blueberry Breakfast Pie

 I have had to give up gluten and trust me when I say GF cooking is hard. This gluten free blueberry breakfast pie recipe I make at least twice a month. The whole family loves it and you know that is when a gluten free recipe is a good one. Enjoy!


Gluten Free Blueberry Breakfast Pie

Ingredients:

3 large eggs separated

3 Tbl maple syrup

1 Tsp vanilla

dash salt

1/2 Tsp baking powder

1/3 cup almond flour

1/3 cup tapioca flour

1/2 cup fresh or frozen blueberries

Instructions:

Separate your eggs and use a hand mixer to whip the egg whites till nice and fluffy. In a medium sized bowl place the egg yolks and stir to mix well and add the rest of the ingredients (except egg whites) and thoroughly mix together. Next, fold the egg whites in and mix to incorporate the egg whites. Pour into a round pie pan that is preferably sprayed with non stick cooking spray but you can grease too. Top with blueberries. Bake 350 degress 15-20 mins depending on your oven. Keep watch and bake until the top is a nice golden brown. Slice and eat plain but we like it with butter and a little maple syrup.

**Note: I prefer cooking spray for the pan because the tapioca flour makes the pie stick more to the pan and it come out nice and easy I have noticed when I use cooking spray.

How To Make A Smoked Peach Pie In Your Treager

With all the fresh peaches available in summer you have to take baking outside and bake a smoked peach pie on your Traeger or smoker. Hands down we all agreed this was the best pie I had ever made.
So if you are like me the oven doesn't get much use in the summer. I just can't heat up the whole kitchen to bake something. But, I had all these wonderful peaches off our tree and wanted to make a pie so we baked it on our Traeger/pellet smoker grill out on the patio. 

Boy, it came out perfectly and the flavor was oh so good. The crust was perfect and flaky but had the most delicious slightly smokey flavor. Oh my that contrast with the sweet tangy peach pie filling made for the best pie recipe ever!

Baking A Pie On Your Traeger/Smoker Grill

First, either prepare your favorite crust from scratch or like me, buy premade crusts and make life easier.

Second, go ahead and use your favorite peach pie filling recipe. I switch around to my faves online.

Third, assemble the pie and add a few dollops of butter on your peach filling.

Lastly, brush the top of your pie crust with an egg wash. An egg wash makes the pie come out so beautiful and shiny.

Time To Bake Your Pie On Your Traeger

Preheat your Traeger to 400 degrees for 15 minutes and place the pie in a metal pie pan right onto the grill. Close the lid and bake for 50 minutes. The Traeger website says 50 - 60 minutes baking time but we pull our pies off at about 50 minutes and they are perfectly done so bake to your liking.

Homemade Pumpkin Pancakes

It's pumpkin time. I love pumpkin pancakes so I came up with an easy way to make homemade pumpkin pancakes. They were so good I want to have them way more than I should.

Homemade Pumpkin Pancakes

  • You need to mix up your regular pancake recipe. I have a great scratch pancake recipe if you need one but  boxed mix will do as well.
  • Into your batter, add 2 tablespoons canned pumpkin puree per every two pancakes your recipe is making.
  • Add a couple dashes or more of pumpkin pie spice depending on how much spice flavor you want.
  • Mix and cook as usual.

Served with real maple syrup, this is such a great fall treat. I think I was yumming the whole time I was eating them. Any leftover pumpkin puree can be frozen until next time.

I made my pancakes in my new ceramic non-stick fry pan. I had been wanting one of these healthier non stick pans and I love it. You can cook without oil too but I find things brown and cook up better with a little oil or butter in the pan. So if you have been wanting to try one of these, I really think they are worth it and not very expensive either.

Slow Cooker Peach Cobbler

When your tree gives you a ton of peaches you make slow cooker peach cobbler. Seriously this crock pot cobbler recipe is so easy. With a scoop of good vanilla ice cream, it is Heaven.

Slow Cooker Peach Cobbler

Ingredients
  • 4 cups Frozen, or fresh sliced peaches unpeeled
  • 1/4 cup (or less for really sweet peaches) sugar
  • 1 1/2 cups Bisquick or all purpose baking mix
  • 1/3 cup Sugar
  • 1 cup Milk
  • Dash Salt
  • Good dash Cinnamon
  • Dash Nutmeg
Cooking Directions
  1. Toss sliced peaches with 1/4 cup sugar and set aside. Spray or butter well your crock pot, turn onto low.
  2. In medium bowl, gently beat Bisquick mix, sugar, salt, cinnamon, nutmeg and milk with whisk until blended. Pour over peaches in slow cooker.
  3. Cover; cook on low heat setting 3 - 4 hours or until cobbler is set in center.
  4. Serve cobbler with vanilla ice cream or whipped cream.

Easy Cheesy Drop Biscuits

Ultimate comfort food, these easy cheesy drop biscuits are perfect for dinner or alongside a pot of homemade soup. My family requests these all the time and this homemade biscuits recipe is so simple you can mix up a batch in just minutes.

Easy Cheesy Drop Biscuits

Ingredients:
Baking mix
milk
shredded cheddar cheese 

Mix up what you will need for the amount you would like using the recipe for drop biscuits on the box of baking mix. You can also make up your own scratch all purpose baking mix using one of the many recipes online. Add a cup or two (for large batch) or so of shredded cheese depending on how many biscuits you are making. Stir until just mixed. 

I use my handy dandy cookie scoop to make uniform round biscuits. Scoop a heaping amount of the biscuit batter and just drop onto cookie sheets. Bake at 450 for 10-12 minutes until the tops are a golden brown.

These leftover biscuits are perfect the next day sliced in half to make a fried egg sandwich for breakfast.
